What do the recipes this week have in common? This week’s meal plan is exactly what I cooked last week…and honestly, it saved me. With the holidays coming up, life feels extra busy and every night is packed with something. We’re all gearing up to cook big holiday meals, so weeknight dinners need to be quick, easy and simple.
These five recipes check every box. Three easy gluten free bowls all made from the same six base ingredients, plus two cozy risottos that feel comforting without taking forever. Everything is affordable, everything comes together fast, and everything kept us fed on the nights I just wanted to sit down, breathe, and relax after putting Fletcher to bed.
