TGIF!!! Hope everyone has exciting plans for this weekend!! Today I am sending you guys the 5 dinner recipes that are absolutely MY FAVORITE lately!! Of course each recipe is gluten free with a dairy free option!

What do the recipes this week have in common? There are 2 recipes this week with beef/steak. You can make double the first night so you have leftovers for an easy dinner the next night. One calls for shredded beef and one calls for a steak cut up in a salad, but you can use shredded beef for both recipes to make your life easier if you’d like! There are also 2 recipes with rice so make sure to make a double batch the first day for already made rice to use the next day!

Monday: Oven Baked Fajita Tacos (Gluten free, dairy free option)

I love ordering in Mexican food because it is so easy to make naturally gluten free with corn tortillas. But, l’m always debating do I want tacos that are made for me, or fajitas that are fun to make myself. In these Fajita Tacos, I don’t need to choose because it combines both dishes!! It has all the delicious flavors or classic fajitas, but all set up for you in tasty taco form. Plus, they only take 30 minutes to make, which is way faster than delivery!

Tuesday: Easy Deconstructed Stuffed Peppers (Gluten free, dairy free option)

This easy weeknight meal is made in 30 minutes or less and uses minimal dishes. This meal has all the flavors of a delicious stuffed pepper without any of the assembly work! This stuffed pepper casserole is an easy main dish your whole family will love, just like my gluten free stuffed peppers without rice.
