My husband and I made this together this week and it was a really easy but fun recipe to throw together after the baby was asleep! We love proscuitto so any recipe where it gets crispy around the edges is ideal! This recipe is made all in one pan, in only 30 minutes and is gluten free!

How to Store and Reheat:
This recipe reheats really well! Plus it is great for an easy meal prep. I love to make this for for dinner and then have the leftovers for lunch the next day! I store in an airtight container in the fridge for 3–4 days. When I’m ready to enjoy again, I reheat it a skillet on the stovetop or in the oven!

The Proscuitto Wrapped Blue Cheese Chicken Recipe:
Serving size: 2
Time: 30 minutes
Ingredients
2 chicken breasts
4 slices prosciutto
1/4–1/3 cup blue cheese
1 bunch baby broccoli
Olive oil
Salt + pepper
Directions
Preheat oven to 400°F.
Slice a pocket into each chicken breast (don’t cut all the way through). Stuff with blue cheese.
Wrap each chicken breast with 2 slices of prosciutto, covering as much as possible.
Heat a drizzle of olive oil in an oven-safe pan over medium-high heat. Add chicken and sear 2–3 minutes per side until the prosciutto is crispy.
Add baby broccoli to the same pan, drizzle with olive oil, and season with salt and pepper.
Transfer the entire pan to the oven (no baking sheet needed). Bake for 10–15 minutes, until chicken is fully cooked through.
Let rest for a few minutes, then serve with the roasted broccoli.
