THE MEAL PREP
Meal prep notes: I went with a little mexican theme here for cinco de mayo! Theres stuffed peppers, a chipotle taco skillet and stuffed sweet potatoes. You can use similar toppings on all 3 recipe to buy in bulk. Or you can switch your toppings up to make all 3 meals feel really different.
There is shredded beef in the stuffed peppers but shredded chicken in the chipotle taco skillet. You can make one of these proteins in bulk and use it for both recipes to make this week easier if you’d like.
