It’s finally Friday! I hope everyone has fun plans for the weekend! I baked 2 different pumpkin recipes this week! I baked pumkin chocolate chip bars which I’ll be sharing soon on instagram (@kaylacappiello) and I also baked the trader joes pumpkin loaf mix. I love using applesauce in it instead of oil to keep it light.
As always, every recipe this week takes less than 30 minutes to make! I know it’s back-to-school time and the fall is SOO busy. Each recipe here is able to be made in 30-minutes which is about how long I usually have to make a good dinner and get it on the table. The recipes are easy, many only use one pan and of of course gluten free and dairy free. Time to make dinner EASY!
Monday night is an easy 3-ingredient chicken recipe you can use over greek bowls, in tacos, in pastas or salads! There is a salad on wednesday this chicken would be PERFECT in! Tuesday is kinda like a mix between my tukey meal prep recipe and an italian style chili. We had it last week and I’m making it again asap. Thursday is a great recipe to use any leftover rice you had on tuesday. If you make double the rice on tuesday it’ll make your week easier!

Breakfast meal prep for the week:
Another Gluten free meal prep breakfast sandwiche recipe - these are awesome to prep ahead of time and store in the freezer! I used these rolls from o’doughs to make them.
Meal prep muffins that you can add any mix ins you want. I did strawberry ones, blueberry ones, chocolate chip blueberry and chocolate chip strawberry ones!
