Every Sunday, Andrew and I have been making a big batch of a one-pot meal for a cozy sunday night dinner but also so we have leftovers during the week. We’ve been soooo busy lately that this has helped us A LOT. This week’s sunday night meal was a One-pot Chipotle shredded beef chili, which I will be sharing below for you guys! But its easy to eat as chili one night, and then you have chili leftovers to use as is or make into baked chili tacos!

I don’t have time either on weeknights to spend 2 hours in the kitchen, but I still want a delicious meal too. Each meal on the meal plan is exactly what I made the week before so I know the recipes are easy, takes less than 30 minutes and makes minimal mess…because I too hate doing dishes!
