This Garlic Parmesan Chicken is literally fool proof. I prepped all the ingredients in 15 minutes, then roasted it on a sheet pan in the oven for 45 minutes. Plus, it makes about 6 servings, so perfect for another easy dinner the next night!
I always thought roasting a full chicken (or a half chicken) was hard, and it seemed really intimidating but it really wasn’t, I promise!!
This Garlic Parmesan Chicken was the PERFECT easy dinner recipe for a night where I did not feel like cooking. We’ve been having such a busy week that any meal I can throw on a sheet pan and not think about is idea. Plus it is of course gluten free.

Tips & Variations
You can switch up the rub and spices on the Roast Chicken and Potatoes. I used dijon mustard, garlic, onion powder, salt, pepper and olive oil for the chicken and potatoes last time. I’m using parmesan, garlic and onions this time!
How to Store and Reheat:
This recipe reheats really well! Plus it is great for an easy meal prep. I love to make this for for dinner and then have the leftovers for lunch the next day! I store in an airtight container in the fridge for 3–4 days. When I’m ready to enjoy again, I reheat it a skillet on the stovetop, in the oven or microwave!

The Garlic Parmesan Chicken Recipe:
Serving size: 6
Time: 1 hour
Ingredients for the chicken:
1 half chicken
3 tbsp Mayo
2 tbsp olive oil
2 tbsp minced garlic
2 tbsp onion powder
3 tbsp parmesan cheese
Salt and pepper to taste
To make this a complete meal:
3-5 Yukon gold potatoes, cut into quarters
2 small onions, cut into quarters
2-3 bunches of bok choy, cut in half
Directions:
Preheat the oven to 425.
In a small bowl, mix together the mayonnaise, garlic, onion powder, olive oil and parmesan cheese.
On a sheet pan, add the half chicken. I like to line mine with parchment paper so it is easier to clean up. Brush it with half the mixture.
Add to the oven and bake for 35-45 minutes or until the chicken is fully cooked!
Pro tip: If you’re making this a complete meal just add the potatoes, onions and bok choy to the sheet pan and roast everything up all together!
