I made these mason jar salads 3 times over the past 2 weeks. They are loaded up, very filling and of course good for you! Also, being pregnant I’m totally craving fast food…but like fast food I can’t have because it is not gluten free…so enter this big mac casserole which was DELISH!

This Week’s Meal Prep:
Monday: Chipotle Chicken Wings (GF/DF)
It’s not a true game day without chicken wings. If we’re watching at the bar, I’m absolutely ordering them, and if we’re watching at home I’m absolutely making them! Most restaurant chicken wings are fried in oil but these gluten free chicken wings are actually baked! This makes them easier for an at-home recipe, and also a better for you option! All you need is chicken wings, your seasoning and a sheet pan!
Tuesday: Balsamic Salad with Steak (GF/DF option)
My 20-minute Gluten Free Salad with steak is my favorite go to when I need a big dose of fresh vegetables and protein. It is loaded with crunchy veggies, creamy cheese, charred corn and grilled steak, tossed together with a homemade balsamic dressing. Truly it is always a crowd-pleaser! It is perfect to bring to a summer bbq, cookouts or when you need a light dinner heavy on the protein!
