Bruschetta Pasta Recipe:
Serves: 4
Cook time: 15 minutes
Ingredients
1 box gluten free pasta
1 jar bruschetta and/or 1 cup cherry tomatoes, halved
1 cup mozzarella pearls
2–3 tbsp olive oil
Juice of ½ lemon
1–2 tsp garlic (minced or garlic powder)
1 tsp dried oregano
Salt and pepper, to taste
¼ cup fresh basil, chopped

Directions
Cook gluten free pasta according to package directions. Drain.
While the pasta cooks combine cherry tomatoes, minced garlic, olive oil, balsamic vinegar, fresh basil, salt and pepper in a large bowl.
Toss and let sit for at least 5 minutes so the tomatoes release their juices.
Add the drained pasta to the bruschetta mixture and toss until everything is evenly coated.
Top with shaved parmesan and a drizzle of balsamic glaze.
Serve immediately as a hot dinner or chill and serve as a cold pasta salad!
