When I was diagnosed with celiac disease, I remember googling “how to start eating gluten free” I found a million blog posts that all said the same five things and none of them actually helped me get through week one. So I started keeping mental notes. What to avoid, what to ask at restaurants, what actually helps when I get glutened, how to not spend my entire grocery budget on expensive gluten free pastas or breads that I may or may not like. This guide is everything I’ve learned since then, all in one place.

This is my real experience and my real system. Everyone’s celiac or gluten intolerance journey looks a little different, so take what’s useful for you and feel free to leave what’s not.


What does it actually mean to eat gluten free?

Gluten free means cutting out anything made from wheat, barley, rye, oats, and triticale. I use B.R.O.W.T. to remember it. That’s grains, but it’s also anything made FROM those grains, and a lot of hidden stuff you wouldn’t expect, like sauces, soups, and seasoning packets. Gluten is a protein that acts as a binder, so food companies love using it to thicken and stabilize things that have nothing to do with bread.

Here’s what tripped me up the most in the beginning: gluten isn’t just “don’t eat bread.” It’s in soy sauce. It’s in some deli meat. It’s in your favorite salad dressing. It’s in the seasoning packet on a bag of rice. That’s the part nobody tells you.
