5 Easy Weeknight Dinners with Shredded Chicken

This week we are making 5 SUPER EASY DINNERS with shredded chicken! Shredded chicken is so versatile and it’s really each to make a big batch of early in the week to use throughout your meals. Theres really minimal work to do here and minimal flavor so the protein does its job of taking on all the different flavors of whatever meal you are using it in!
How to make shredded chicken in the crock pot: Simply place chicken breasts in your crock pot. Add your choice of liquid - chicken broth, bone broth, or water. Season with salt and pepper. Cook on high for 3-4 hours, or until the chicken is easily shredded.
How to make shredded chicken stovetop: To make stovetop shredded chicken, season boneless, skinless chicken breasts with salt and pepper. Heat a large pot or Dutch oven over medium heat with a bit of olive oil. Sear the chicken on both sides until browned. Add chicken broth or water to cover the chicken halfway. Bring to a boil, then reduce heat and simmer, covered, for 15-20 minutes, or until the chicken is cooked through. Remove from the pot, let cool, and shred with two forks.
How to save time: For all these recipes instead of making your own shredded chicken…buy a rotisserie chicken! There is nothing wrong with that and it saves you time….Just make sure it is gluten free!
