I’ve seen so many recipe videos that look really good, but I want my weeknight recipes to be easy, and so many are not! I’m not a professional chef. I move slow. The ideal situation is prepping some ingredients earlier in the week to make other nights’ dinners quicker and faster.
For example, this week we’re going to be making 5 dinner recipes all made with rice. That way, I can make the rice in one very large batch early in the week and save me time for the rest of the week.

This gluten free chili is packed with ground turkey, red beans, tomatoes and spices! It is all simmered together on the stovetop until tender and flavorful and cooks in under 30 minutes. We all know there’s nothing better than a big bowl of chili on a cold day, but this cozy meal is a crowd pleaser even when you don't have the entire day to let it simmer.
