I love ANYTHING with buffalo sauce, so these 30-Minute Buffalo Chicken Bowls were such a hit this week in my house! They are naturally gluten free and easy to make dairy free if needed. This is an easy weeknight meal I make on repeat in my house because what’s better than an easy to clean up dinner when you have a 9-month old! I switch up the sauces each time. Here I used buffalo sauce but I also enjoy using bbq sauce or even ranch!

These Buffalo Chicken Bowls reheat really well! Plus it is great for an easy meal prep. I love to make this for for dinner and then have the leftovers for lunch the next day! I store in an airtight container in the fridge for 3–4 days. When I’m ready to enjoy again, I reheat it a skillet on the stovetop or they are good cold too!!!

The Buffalo Chicken Bowls Recipe:
Servings: 2
Time: 30 minutes
Ingredients:
2 chicken breasts
4 tbsp ranch seasoning
2 tbsp olive oil
6 corn tortillas
2 cups shredded cheddar cheese
1/4 cup blue cheese
2-4 tbsp buffalo sauce
1/4 cup ranch
2 cups cooked rice
1–2 cups shredded lettuce
2 tbsp green onions, chopped
1/2 tsp garlic powder
Directions:
Season the chicken breasts with 2 tbsp ranch seasoning. Heat 1 tbsp olive oil in a pan over medium heat and cook the chicken until fully cooked and golden on the outside, about 6–8 minutes per side.
