What do the recipes this week have in common? Thanksgiving is coming up so quickly, and I can already feel that giant holiday grocery list creeping in. This time of year always feels a little extra expensive, especially if you are hosting, so I have been really focused on keeping our everyday meals simple, cozy and as budget friendly as possible. 🦃🥣✨
Before the big grocery shop hits, I wanted to share three cheap and comforting pantry meals I have been making nonstop. They are perfect for lazy nights, busy nights or any night when you just want something warm, easy and satisfying without spending a lot of time or money. These are the meals that get us through the week feeling full, comforted and stress free.
This week has 3 budget friendly, pantry style dinners to get you through to thanksgiving. They are SIMPLE, QUICK and EASY!!

Monday: $7.87 Chicken Parm with vodka sauce
(gluten free, dairy free option)
• Rummo GF pasta: $3.50
• Chicken breasts: $4.00
• GF breadcrumbs (1 cup): $2.25
• Vodka sauce: $4.99
• Mozzarella (1 cup): $1.00
Total: 2 servings → $7.87 per serving
Ingredients
1 bag Gluten free pasta (linked below)
2 Chicken breasts
1 cup Gluten free breadcrumbs (linked below)
2 tbsp Olive oil
1 jar Vodka sauce or use dairy free sub
1 cup Mozzarella or use dairy free sub
Parmesan cheese (optional) or use dairy free sub
Cracked black pepper
Extra olive oil for drizzling
Instructions
Cook the gluten free pasta according to the package directions.
Bread the chicken cutlet in gluten free breadcrumbs and pan fry in a little olive oil for 5 to 7 minutes per side, or until fully cooked.
Drain the pasta and stir in vodka sauce, reserving about ½ cup.
Spoon the reserved vodka sauce over the cooked chicken cutlet, top with cheese and cover the pan with a lid until the cheese melts.
Serve the chicken over the pasta and finish with parmesan cheese, cracked black pepper and a drizzle of olive oil.
